  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease an 8×8 baking pan with coconut oil or butter. Alternatively, you can layer the pan with parchment paper.
  3. In a medium mixing bowl, mix the dry ingredients together until well mixed. Set aside.
  4. In a small mixing bowl, mix the melted coconut oil, eggs, coconut cream and vanilla extract together. Fold in the dry ingredients and mix until combined. Fold in the chocolate chips if using.
  5. Spread the blondie batter into the prepared baking pan and top with extra chocolate chips.
  6. Bake for 25-30 minutes, or until the keto blondies are golden brown.
  7. Remove the baked blondies from the oven and let them cool slightly before serving.
