How To Make Keto Blondies
For this recipe you will need coconut flour, coconut oil, large eggs, coconut cream, vanilla extract, granulated keto sweetener (erythritol or monk fruit), baking powder and optional dark chocolate chips (I used these erythritol sweetened chocolate chips).

In a medium bowl, mis the dry ingredients together until well mixed. In a separate mixing bowl, mix the eggs, coconut oil, and coconut cream together until combined. Slowly add the dry ingredients into the wet ingredients.
Then, fold in the chocolate chips or any other additional ingredients like berries or nuts.

Spread the blondie batter into a greased 8×8 inch baking pan and bake for 20-25 minutes or until golden brown. Allow the blondies to cool slightly before cutting. Serve the warm blondies alone or topped with coconut whipped cream or ice cream.
Store leftover keto blondies in an airtight container. Store the sugar free blondies at room temperature for 2 days or in the refrigerator for 7 days. To freeze, wrap the keto blondies individually in plastic wrap and freeze for up to 2 months.
Ingredients and Substitues
- Coconut Flour – This recipe using only coconut flour as a base since coconut flour is low-carb and keto friendly. Do not use almond flour or almond meal in place of coconut flour, the two flours are not interchangeable in a 1:1 ratio.
- Coconut Oil – Coconut oil is the perfect keto oil for baked goods! If you’re not off diary, you may substitute with butter.
- Eggs – Eggs are essential for coconut flour baking. Do not use any other egg substitute or the blondies will not turn out properly.
- Coconut Cream – Coconut cream is delicious and add a lovely coconut flavor to this recipe. You may substitute heavy cream in place of coconut cream.
- Granulated Sweetener – I tested this recipe with erythritol but other keto sweeteners like monk fruit and golden erythritol are great substitutes.
- Vanilla Extract – You may omit or use other extracts like almond extract to add different flavor. You can use homemade vanilla extract too!
- Baking Powder – Use my homemade baking powder if you need a corn free alternative to commercial baking powder.
- Chocolate Chips – Optional, but I love chocolate chip blondies so I added them on top of my keto blondies. Make sure to use keto-friendly chocolates in this recipe to keep the carbs low!

Optional Toppings and Flavors:
- Add up to 1/3 cup of almond butter or peanut butter to make keto peanut butter blondies.
- Use sugar free white chocolate chips instead of chocolate chips to make white chocolate low-carb blondies.
- Make strawberry blondies by adding chopped strawberries to the batter and top with dried strawberries and keto white chocolate chips!
FAQ
If your blondies are dry you most likely over baked them. These coconut flour blondies are soft and moist, but if you over bake them they will dry out.
A blondie is the opposite of a brownie, usually a vanilla based bar that’s soft and chewy with sweet vanilla flavor.
Yes, you can freeze these blondies for up to two months in the freezer. I suggest individually wrapping the bars in plastic wrap and them putting them in a freezer safe bag.
