Shaved Rainbow Carrot Salad with Ginger Apple Cider Vinaigrette

This salad is bright, beautiful, and full of flavor! It’s the perfect side for nearly any main dish.

Ingredients

5 cups baby arugula

2 medium rainbow carrots, shaved using a vegetable peeler

1/4 cup diced red onion

1/4 cup olive oil

2 tablespoons lemon juice

1 tablespoon apple cider vinegar

1 tablespoon freshly ground ginger

1 teaspoon dijon mustard

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

Instructions

Place the arugula, shaved carrots, and red onion on a platter. Whisk together the olive oil, lemon juice, vinegar, ginger, dijon, salt and pepper in a small bowl. Whisk well. Drizzle over the salad, and toss well to coat.
