To make this delicious recipe, you’ll need:
- 5 cups baby arugula
- 2 medium rainbow carrots, shaved using a vegetable peeler
- ¼ cup diced red onion
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon freshly ground ginger
- 1 teaspoon dijon mustard
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
If you don’t have red onion… you could substitute shallots or yellow onion.
You can assemble the salad and dressing separately up to 3 days ahead of time and just combine them right before serving.
