This sandwich is a triple cheese delight! Crispy bread is coated in a butter parmesan spread that envelops melty mozzarella and cheddar cheese.
3 tablespoons unsalted butter, room temperature, divided
2 tablespoons freshly grated parmesan cheese
4 slices sourdough bread
2 slices fresh mozzarella, or mozzarella from a brick, approximately 1/4-inch thick
2 slices white sharp cheddar cheese, approximately 1/4-inch thick
Melt 1 tablespoon butter in a large nonstick pan over medium heat.
In a small bowl, combine remaining butter and grated parmesan cheese.
Spread the butter parmesan mixture over each slice of bread.
Place the 2 slices of the buttered bread butter side down in the pan.
Divide cheese mixture between the slices.
Top with remaining bread, butter side up.
Cook for 2 minutes, until browned.
Flip, and cook for an additional 2 minutes or until cheese is melted and the bread is toasted and golden brown.
Serve immediately, or hold in a preheated 200 degree oven in a baking pan on a wire rack for up to 30 minutes.
