
These delightful bites of potato, cheddar & chive egg bites are a copycat Starbucks’, but made by you! A simple recipe, but big on flavor!
2 tablespoons olive oil, separated
2.5 cups diced potatoes, frozen or fresh (cook time will vary)
¼ cup chives, chopped
1 cup shredded cheddar cheese, divided
6–8 eggs, ~16oz
Salt + pepper
Optional spices (1/2 tsp each): garlic powder, oregano, thyme
Preheat oven to 350 degrees Fahrenheit.
Drizzle 1 tablespoon of oil in a pan over medium heat. Add the diced potatoes and cook until golden brown. Scoop into an 8×8 casserole dish.
Sprinkle the chives and half of the shredded cheddar on top of the potatoes.
Crack eggs into a bowl and whisk until an even consistency. Add spices, if desired, then pour into the casserole dish. Use a spoon to ensure the eggs completely cover the potatoes. Top with the remaining cheese.
Sprinkle a pinch of salt and several cracks of black pepper on top of the mix, then put the casserole dish into the oven. Cook for 45-50 minutes. Remove from oven and let cool slightly. Cut into slices and savor!
