Ingredients

Olive oil – Just enough to sauté the potatoes until golden brown. Olive oil amplifies the savory flavor of the bites.
Diced potatoes – Whether fresh or frozen, potatoes provide the carbohydrates needed to fill your belly and fuel your brain. The frozen variety may have a longer cook time, but either will work well in this recipe.
Chives – Chives are a delicious herb that provide an oniony essence to any dish. Contrary to popular belief, they are not the same as green onions! Chives are more delicate and do not have an edible bulb.
Cheddar – Is there a better combination than cheddar cheese and potatoes? The sharp tang of the cheese melting over a bowl of toasty potatoes is an ultimate comfort food. But once you add in eggs, it takes the combo to a whole new level!
Eggs – When one thinks of eggs, the first thing that comes to mind is breakfast. Instead of scrambled or fried, eggs are given a promotion by the addition of other tasty ingredients in this delicious Starbucks dupe.
Salt & Pepper – A sprinkle of salt + pepper in the pan of potatoes and then on top of the casserole before going into the oven is essential. We like pink Himalayan sea salt for its lower sodium content. We also recommend a pepper mill for freshly cracked pepper, which is the aromatic version of ground black pepper.

Spices – Spices are optional for this egg bake, though are a lovely boost of flavor. Garlic powder, oregano, and thyme are the ones we chose to mix into the eggs before they are poured into the dish.
How to Make Potato, Chive, & Cheddar Egg Bakes

Step One: Preheat oven to 350 degrees Fahrenheit.
Step Two: Drizzle 1 tablespoon of oil in a pan over medium heat. Add the chopped potatoes and cook until golden brown. Sprinkle with salt + pepper. Scoop into an 8×8 casserole dish.
Step Three: Sprinkle the chives and half of the shredded cheddar on top of the potatoes.

Step Four: Crack eggs into a bowl and whisk until an even consistency. Add spices, if desired, then pour into the casserole dish. Use a spoon to ensure the eggs completely cover the potatoes. Top with the remaining cheese.

Step Five: Sprinkle a pinch of salt and several cracks of pepper on top of the mix, then put the casserole dish into the oven. Cook for 45-50 minutes. Remove from oven and let cool. Cut into slices and savor!

Flavor Variations
Cheese Trio – Use two other types of cheeses with the cheddar, though maintain the 1 cup total in the recipe. Gouda and mozzarella would be fantastic!
Spicy – Mix 2-3 teaspoons of red pepper chili flakes with the potatoes while sautéing for a spicy kick in each bite.
Greek – Add 1/4 cup chopped olives in the mix for an extra tangy taste.
Storing Potato, Cheddar & Chive Egg Bakes
