Let’s face it, this breakfast really does two jobs when you think of it. It nourishes you, and if you’re not a morning person, it gives you one less thing to worry about when your feet hit the floor in the morning.
“Ugh. What am I going to make for breakfast? I’m too hungry and sleepy to think straight. Oh, wait! I made myself a gorgeous bowl of oatmeal last night! It’s a gift to myself, from myself!”
And then you’ll lightly skip into the kitchen, and grab this oatmeal and really be proud of yourself.
Isn’t that what we all want first thing in the morning? A little joy, a little pride, and a whole lot of delicious flavors? Oh, yes.

First let’s talk ingredients. For this recipe, you’ll need:
- 1 ½ cups old-fashioned oats
- ¼ cup cooked white or red quinoa
- 2 cups coconut milk
- 1 tablespoon maple syrup, honey, or agave
- ¼ teaspoon kosher salt
- 2 large fresh or frozen strawberries, thinly sliced
And for garnishes, I’d recommend:
- Roughly chopped pistachios
- More maple syrup, honey, or agave
And from there, the step-by-step recipe is surprisingly simple. All you have to do is:
- In a medium bowl combine the oats, quinoa, milk, and sweetener.
- Cover and refrigerate overnight.
- Top with strawberries, and desired garnishes.

Let’s talk about the coconut milk. I’d recommend using coconut milk because it’s the way Starbucks does it and also because it’s delicious and thick, but if you’re a big fan of vanilla almond milk or even unsweetened oat milk – those would also make a great base for this breakfast of joy.
If you’d really, really, really, really, treat yourself, make yourself a couple days worth of this overnight strawberry oatmeal. If one day is good, isn’t three days of delicious breakfasts even better? Also, feel free to play with your quinoa. Starbucks uses white quinoa, but if you have red quinoa on hand, think how beautifully that will visually pair with the strawberries!

Too many oats so it’s not as liquidy like the Starbucks one, I’ll try only a cup of oats next time for the texture. Flavor was good though!
