This bowl of oatmeal is full of coconut flavor and topped with strawberries for the ultimate hand’s off breakfast!

Ingredients

1 1/2 cups old-fashioned oats

1/4 cup cooked white or red quinoa

2 cups coconut milk

1 tablespoon maple syrup, honey, or agave

1/4 teaspoon kosher salt

2 large fresh or frozen strawberries, thinly sliced

Garnishes:

Coconut flakes

Roughly chopped pistachios

Maple syrup, honey, or agave

Instructions

In a medium bowl combine the oats, quinoa, milk, and sweetener.

Cover and refrigerate overnight.

Top with strawberries, and desired garnishes.
