The perfect on-the-go breakfast!
This Chicken, Maple Butter & Egg Sandwich is a direct dupe of the popular new Starbucks sandwich. (Which to be clear, is also old – as it’s been previously released at least once and then was yanked from the market, only to return now!) So if are looking to save money on breakfast, or want to have your own homemade meals on-hand, this recipe is for you!

All the ingredients listed can be bought pre-made at the grocery store, but the eggs and maple butter are whipped up from scratch to boost the fresh flavor of the sandwich.
If you are egg/meat/dairy-free, you can use suitable substitutes for each item. We are lucky to live during a time when people of varying diets can enjoy similar dishes thanks to the food industry’s innovations. From ‘eggs’ made of mung beans to vegan ‘chicken’, every piece of this breakfast sandwich can be swapped for your favorite alternative!
Ingredients
- Eggs – Eggs are arguably the epitome of breakfast foods. To make them sandwich-friendly for this recipe, cook them like an omelette, then cool and slice into squares. Use your bread as a guide for the right size to cut. If you are egg-free, use a vegan substitute to attain the same texture and shape.
- Breaded chicken patties – Breaded chicken patties are available in your local grocery’s freezer section. They are so convenient and easy to cook! In no time at all, you can enjoy a protein packed breakfast. For vegetarians, look for meat-free chicken patties in the appropriate freezer aisle.
- Maple Butter – Who knew butter could taste better than it already does? Mixed with maple syrup and a touch of brown sugar, the creamy flavor is dazzled with a heavenly sweetness.
- Ciabatta Rolls – This recipe works with any type of bread, but the ciabatta roll gives it the most authentic café look and mouthfeel. Toasting the slices also warms the entire sandwich for an all-around sizzling bite.
How to Make Chicken, Maple Butter & Egg Sandwiches
Step One (Prepare the eggs): Place a pan over medium heat (add a drizzle of oil, if need be). Crack eggs into a bowl and whisk. Pour the eggs into the pan and cook omelette-style. Once cooked through, remove from heat and let cool slightly. Using your bread as a size guide, slice the eggs into two squares.
Step Two (Cook the chicken patties): Cook chicken patties according to instructions on packaging. Our patties were cooked in an Airfryer at 350 degrees for 8 minutes until crispy.
Step Three (Make the Maple Butter): While the patties are cooking, use a fork or electric mixer to blend the butter, maple syrup, and brown sugar. Add a pinch of salt if using unsalted butter.
Step Four (Toast the rolls): Place a pan over medium heat. Slice ciabatta rolls in half and spread a thin layer of the maple butter onto each side. Put butter-side down onto the hot pan and toast until golden. Move to a plate.
Step Five (Assemble sandwich): Put the bottom of the roll on a plate, then add the egg, chicken patty, and a dollop of maple butter. Finish with the top of the roll, slice in half, and enjoy!

Flavor Variations
Cheesy: Melt a slice of cheese, (smoked gouda or cheddar), onto the chicken patty in the last minute of cooking time.
Avocado: Slice an avocado and use a fork to mash. Spread onto the top roll before assembling. *Add some salt and splash of lime juice to the avocado for a quick-fix-guacamole!*
Spicy: Dash a few drops of your favorite hot sauce on top of the chicken patty before assembling the sandwich. Hot sauce taste delicious next to the sweetness of the maple butter!
Storing Chicken, Maple Butter, & Egg Sandwiches
When making multiple sandwiches, store in an airtight container in the fridge for up to a week. If freezing, wrap in a layer of parchment paper, a layer of aluminum foil, then place in a large freezer bag. Sandwiches will keep in the freezer for 2-3 months. To reheat, unwrap and place in a microwave, oven, or air fryer and heat until warm.
