Starbucks’ vanilla scones are fluffy and filled with the creamy and floral notes of vanilla are topped with a sweet vanilla glaze – which are the types of flavors that bring a light to our collective dreams.
These wonderful bites are perfect with coffee, tea, iced tea, seltzer, wine…well, you get the idea.
The only thing these may not pair perfectly are hands sans a napkin. Because, you will have sticky fingers, so plan accordingly!

Scone Ingredients:
- 2 ½ cups all-purpose flour

- 1 ½ cups powdered sugar
- 3 ½ tablespoons heavy cream
- 1 teaspoon vanilla extract
How to make them vegan
To make these scones vegan, you’ll need to swap out the heavy cream and the egg.
The best substitution for heavy cream is coconut milk due to its comparable thickness and rich taste. If you’re looking for something a little lighter, I’d do unsweetened oat milk or almond milk.
For the egg, JustEgg is probably your best bet (I haven’t tested this, but generally speaking JustEgg bakes just like a real egg – could also try apple sauce or a chia egg, although I think your results will vary a little more).

Generally scones start to go stale after a couple of days, which you can extend by keeping them in an airtight container. For maximum lifespan, put them in your freezer. If you go this route, I’d recommend freezing them without the glaze. The glaze won’t hold up perfectly in the freezer, but will make the perfect tasty drizzle once the scones are refreshed in the oven!

Scone Ingredients:
2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon kosher salt

Instructions
Scone Instructions:
Preheat oven to 400 degrees.
Fit a large, rimmed, sheet pan with parchment.
In a large bowl, combine flour, granulated sugar, baking powder, and salt.
Cube the butter, and work it into the flour mixture using your fingers or a pastry cutter. Once the butter resembles bread crumbs, scrape the seeds out of the vanilla pod. Stir well to combine.
Add in the heavy cream, and large egg.
Stir well to combine.
Lightly flour a work surface, and knead the dough until it just comes together.
Gently roll the dough out to an approximate 6×5 inch rectangle.
Cut the dough in half lengthwise, and then cut the dough into 12 small triangles.
Bake for 10-12 minutes, or until a toothpick comes out cleanly.
Let the scones cool completely on a wire rack.
Vanilla Glaze Instructions:
Scrape the vanilla seeds into a shallow bowl.
Add the rest of the ingredients to the bowl, and stir well to combine.
Dip the cooled scones into the glaze, and let dry on a wire rack.
