These strawberry cheesecake bites are the perfect treat! Made with fresh strawberries that are filled with a delicious cheesecake filling, these little bite-size treats are perfect for summer.

Ingredients

8–10 medium-size strawberries, rinsed and dried
4 ounces of cream cheese or coconut cream
2 tablespoons coconut cream or heavy cream
2 tablespoons powdered lakanto sweetener* (or your favorite keto sweetener)
1/4 teaspoon vanilla extract

Instructions

Use a spoon to scoop the center of the strawberries out. Discard them to use for later or freeze (don’t waste them!)
In a medium bowl, mix the cream cheese, cream, sweetener, and vanilla until smooth and creamy. Taste the filling and add more sweetener if needed.
Use a piping bag fitted with a decorative top to fill the strawberries. Alternatively, you can use a plastic bag with the tip cut off to fill the strawberries.
Serve immediately or store in the refrigerator for up to 48 hours.

Notes

*Taste the filling before filling the strawberries. Add more sweetener and mix well if you prefer the cheesecake filling to be sweeter.
