Strawberry cheesecake is one of my favorite cheesecake desserts. I created a smaller, easier version of this classic cake by filling fresh strawberries with a homemade cheesecake filling. The result; the tastiest
cheesecake but without the added sugar!
How To Make Strawberry Cheesecake Bites
These cheesecake bites are easy to make and only use a few ingredients. You will need 1/2 pound fresh strawberries (8-10 medium-size strawberries), 4 ounces cream cheese, two tablespoons of coconut cream (heavy cream works too), one tablespoon lakanto powdered sugar, and 1/4 teaspoon of vanilla extract.
Step one: Use a spoon to scoop the center of the strawberries out. I used a teaspoon to do this. Save the extra strawberry filling for another recipe or freeze and add to smoothies.
Step two: In a medium bowl, mix the cream cheese, cream, sugar, and vanilla until smooth.
Lastly, use a piping bag with a decorative tip (optional, makes the strawberry cheesecake bites look pretty) and fill each strawberry with the cheesecake filling.
Serve immediately or store in the refrigerator for up to 48 hours. Dusting the strawberries with powdered sugar gives them an elegant look for serving.

Yes! I made these using coconut cream instead of cream cheese. Please make sure the coconut cream is refrigerated before using it to make the filling.

How do I make these strawberry cheesecake bites Paleo?

Notes
*Taste the filling before filling the strawberries. Add more sweetener and mix well if you prefer the cheesecake filling to be sweeter.
