Cool off with this FOUR ingredients homemade Vanilla Strawberry Swirl Ice Cream, made with a creamy base and a simple strawberry swirl throughout!

  1. Upon opening your strawberry preserves, mix the contents of the jar well to break up the fruit and jam.
  2. In a medium bowl, mix ½ cup of the preserves with the sweetened condensed milk. Stir well until completely mixed.
  3. In a separate large bowl, beat the heavy whipping cream and vanilla using a hand mixer until you have soft peaks. 
  4. Add one large spoonful of whipped cream into the strawberry mixture and incorporate well. This will allow the cream to fold easier into the condensed milk.
  5. Fold the rest of the whipped cream and condensed milk together until well mixed but still airy using a rubber spatula.
  6. Pour ⅓ of the ice cream mixture into a glass dish. Swirl with 2 tablespoons of the remaining preserves. Repeat again by topping with more ice cream mix, then 2 tablespoons of preserves. 
  7. Finally, top with your final layer of ice cream. Swirl the remaining preserves over the top. Using a toothpick, swirl the fruit to create a decorative top.
  8. Cover and refrigerate for at least 6 hours until firm.

Notes

Be sure that your heavy cream is VERY cold, around 40 degrees F. Cold cream whips much better and easier than cream that has been out of the fridge. Keep the cream cold until the last second before using.

 

Use more preserves in this recipe, depending on how sweet you like your ice cream. The sweetened condensed milk also adds a layer of sweetness, negating the need for sugar in the recipe.
