Instructions
- Line an 8×8 inch baking sheet with parchment paper. Melt the dark chocolate in a double boiler or in a glass jar in the microwave. Remove from the heat and stir in 1 teaspoon of coconut oil and 1/4 teaspoon of peppermint extract.
- Pour the melted chocolate over the parchment paper and spread the chocolate evenly with a spatula.
- Place the pan in the freezer to set for 5-10 minutes.
- While the chocolate is setting, melt the white chocolate chips in a microwave safe dish or use the double boiler method to melt the chocolate. Once melted, add a teaspoon of coconut oil and 1/4 teaspoon of peppermint extract.
- Remove the pan from the freezer and spread the white chocolate over the layer of dark chocolate Spread the melted white chocolate evenly with a rubber spatula or spoon.
- Sprinkle the crushed peppermint candies over the white chocolate layer. Place the pan in the freezer to set for 5-10 minutes.
Note: To make the crushed peppermint candies, simple place the candies in a ziplock bag and use a rolling pin to crush the vegan candy canes into small pieces.
Once the chocolate is set, simply cut the vegan peppermint bark into serving size squares and store in an airtight container at room temperature.
