How To Make Vegan Peppermint Bark
For this recipe you will need vegan dark chocolate, vegan white chocolate chips, coconut oil, peppermint extract, and optional crushed candy canes.
Step 1
Line an 8×8 inch baking pan with parchment paper. Melt the dark chocolate in a double boiler or in a glass jar in the microwave. Remove from the heat and stir in 1 teaspoon of coconut oil and 1/4 teaspoon of peppermint extract. Next, pour the melted dark chocolate over the parchment paper and spread the chocolate evenly with a spatula. Place the pan in the freezer to set for 5-10 minutes.
Step 2
To make the crushed peppermint candies, simple place the candies in a plastic bag and use a rolling pin to crush the vegan candy canes into small pieces. Alternatively, you can use a food processor to make candy cane pieces for this vegan peppermint bark dessert.
Step 3
While the chocolate is setting, melt the white chocolate chips in a microwave safe dish or use the double boiler method to melt the chocolate. Once melted, add a teaspoon of coconut oil and 1/4 teaspoon of peppermint extract. Remove the pan from the freezer and spread the white chocolate over the dark chocolate layer. Spread the melted white chocolate evenly with a rubber spatula or spoon. Then, sprinkle the crushed peppermint candies over the white chocolate layer. Place the pan in the freezer to set for 5-10 minutes.
Once the chocolate is set, simply cut the vegan peppermint bark into serving size squares and store in an airtight container at room temperature. Double this recipe and share as a Christmas gift to friends and family!
