These almond flour blueberry muffins are made with nutritious ingredients like almonds, blueberries, and eggs.

  1. Preheat the oven to 325 degrees F.
  2. Line the muffin tins with paper liners and set aside.
  3. Mix the eggs, sour cream, and vanilla in a medium or large mixing bowl.
  4. Once mixed, add the dry ingredients, lemon zest and blueberries. Mix well.
  5. Once the batter is mixed, fill the lined muffin tins 3/4 full with the batter.
  6. Bake the muffins for 20-25 minutes or until golden brown. Once baked, remove the muffin tin from the oven and let the muffins cool.
  7. Place the muffins on a wire rack to cool quickly.
  8. Store the blueberry muffins in an airtight container in the refrigerator for up to five days.
