No-Bake Coconut Date Energy Bites

These easy-to-make snacks are a great healthy treat that are sweet, decadent tasting and energy-boosting.

Instructions

  1. Place the almonds in the bowl of the food processor and process until roughly chopped.
  2. Add remaining ingredients, turn food processor on until well combined.
  3. Using a tablespoon measure, spoon out mixture and roll in balls.
  4. Roll each ball in the remaining 1/4 cup shredded coconut.
  5. Store in an airtight container in the fridge for up to two weeks.

Notes

Note: You can substitute almonds for walnuts, pecans or cashews and you can choose to finish the bites by rolling them in cocoa powder or just leave them without an exterior.
