Place the almonds in the bowl of the food processor and process until roughly chopped.
Add remaining ingredients, turn food processor on until well combined.
Using a tablespoon measure, spoon out mixture and roll in balls.
Roll each ball in the remaining 1/4 cup shredded coconut.
Store in an airtight container in the fridge for up to two weeks.

Note: You can substitute almonds for walnuts, pecans or cashews and you can choose to finish the bites by rolling them in cocoa powder or just leave them without an exterior.
