Dry Ingredients
Almond Flour – Almond flour is made of finely ground almonds and commonly used as an ingredient in gluten-free baking. It gives bakes a subtle, nutty taste and chewy texture.
Coconut Flour – Since almond flour doesn’t have gluten, it needs a secondary flour to act as a binder. Coconut flour is highly absorbent and will provide a light, sweet flavor to the cookies.
Coconut Sugar – The Trader Joe’s cookie box uses coconut sugar, but granulated or brown sugar will do. The flavor will change slightly if you change sugars.
Chocolate Chips or Chunks – A classic! Chocolate chips are a cookie’s best friend, guaranteeing a dollop of chocolatey goodness in each bite!
Baking Soda – Baking soda will allow the cookies to rise in the oven just enough to have a soft, fluffy texture.
Salt – A bit of salt goes in the batter, but another sprinkle of salt on top, (Maldon flake salt is best!), would take these cookies to the next level! Avoid any salt if on a low sodium diet.
Wet Ingredients
Milk – Milk blends the ingredients together. Either dairy or non-dairy milk will work – just choose your favorite!

How to Make Almond Flour Cookies (Trader Joe’s Recipe)
Step One: Add all dry ingredients in a bowl and mix.

Step Two: Make a well in the dry ingredients and pour in the wet ingredients. Mix until just combined.



Step Three: Heat oven to 350 degrees.
Step Four: Use a dough scooper to scoop batter, or form into small discs with your hands. Place on lined baking sheet in alternating rows.


Step Five: Bake in oven for 12 minutes. Remove from the oven and let cool. Enjoy!

Slightly – almond flour absorbs more moisture than regular flour, so more liquids may be needed in a recipe. Also, it may need a longer cook time for the batter to be cooked through.

I’m not sure if the use of only 1/4 cup of milk was an accident? The amount of liquid called for is definitely not enough for the amount of dry ingredients. Coconut flour is especially absorbent and needs lots of liquid to soak up. After I made attempt with the first half of the cookie dough that wouldn’t even come together despite following the recipe exactly, I added about a cup more milk and a tablespoon more of oil (vegan alternative). Unfortunately this still did not save the cookies. They crumble as soon as they are moved or touched, are very dry, and don’t have much flavor at all. I REALLY wanted to like this but I think this recipe needs A LOT more testing before it’s ready to share. You’re absolutely right that coconut flour is super absorbent, and even small variations in ingredients can affect the final texture. In my experience, different brands of almond and coconut flour can behave differently, so it may take some experimenting. You could try adding an egg/flax egg or a bit more fat (like oil or butter) to help with binding and moisture.
Can i make these without the ACV? I cant stand the smell of vinegar 🙁
ACV is needed to react with the baking soda so the cookies rise, so I don’t recommend leaving it out. You can also use regular white vinegar, which has a somewhat milder smell!
