Ingredients

Almond Flour – A heart healthy and classic keto ingredient, almond flour gives these crackers a great texture!
Oil – My personal favorite is coconut oil, of course! Other similar oils are olive, avocado, or sesame. Each oil gives its own subtle, but unique flavor to the crackers.
Water – Just enough to bring the dough together!
How to Make Almond Flour Crackers
Step One: Preheat oven to 350 degrees Fahrenheit and pour flour into a bowl.

Step Two: Slowly mix in oil, then water until dough comes together.

Step Three: Scoop onto a parchment covered surface and roll into a rectangle approximately ¼” thin (or thinner, if you can!).
Step Four: Cut into 1×1” squares and gently spread onto a lined baking sheet.

Step Five: Bake 15-18 minutes, checking every minute after 15 minutes to ensure they do not burn. Remove once lightly golden brown and cool completely.
Flavor Variations
Seedy: Add a teaspoon of super seeds, such as chia or flax, for a nutrition boost and extra crunch!
Herby: Mix in a tablespoon or two of dried herbs, like dill, oregano, or basil, for a burst of flavor.
Olives: Top each cracker with an olive slice. This will add 3-5 minutes to the cook time due to the extra moisture from the olive!
Sweet: Mix a teaspoon of cinnamon and an 1/8 teaspoon of sugar or keto-friendly stevia for a sweet snack!
Tips for Success
Use the proper measurements so the dough is not too wet. Wetter dough will be difficult to roll out and lead to a much longer cook time.
Use a food processor to speed up the mixing.
The thinner you roll the dough, the crispier your crackers and the shorter baking time. Also, the larger you cut the crackers, the longer the baking time!
Allow crackers to cool completely. When you remove them from the oven, they will crisp up as they cool, though will still remain delicate. Top with spreads, rather than scoop!
No almond flour? Blitz a cup of blanched almonds in a food processor until finely ground. Use as directed in the recipe.
Storing Almond Flour Crackers
Almond flour crackers can be stored in an airtight container or jar up to a week or two weeks in the fridge. Crackers may also be frozen for several months, then thawed to room temperature to eat.

FAQ
Yes! These two simple ingredients, almond flour and oil. Almond flour contains nutrients like fiber and potassium, while oil (specifically coconut oil!), has medium-chain triglycerides which help with digestion. However, the overall healthiness depends on the type of oil you use.
Almond flour is not a carb-free ingredient, but it does have a fraction the amount of carbs of all-purpose flour. ¼ cup blanched almond flour has 3 net carbs while ¼ cup all-purpose flour contains ~20 net carbs!
Yes, however the texture will be slightly different. Gluten-free flour also requires xanthan gum as a binder.

Recipe
1 cup almond flour, blanched & finely ground
1-1.5 tablespoons oil (coconut, olive, or similar)
1 tablespoon water (not all may be needed!)
Sprinkle of pink Himalayan salt (optional)
Preheat oven to 350 degrees Fahrenheit.
Start with 1 cup of blanched, finely ground almond flour. Pour into a bowl and use a fork to slowly mix in the oil a drizzle at a time. Once mixed, start adding the water in the same way as the oil until the mixture comes together – you may not need all the water! You can also use a food processor to speed up the process.
Move the dough to a surface covered in parchment paper. Cover with another piece of parchment paper and roll out into a square, approximately ¼” thick. The thinner you roll the dough, the crispier your crackers will be! Once you reach the desired thickness, use a knife or pizza cutter to cut the crackers into 1×1” pieces. Place each onto a lined baking sheet and sprinkle with pink Himalayan salt (optional!).
Put the tray into the preheated oven and bake for 15-18 minutes. Check the crackers at 15 minutes as they start to turn golden brown. Remember, if you rolled your dough very thin, the crispier the crackers will be – and a shorter baking time!
Once golden brown, remove from oven and cool to room temperature. Scoop crackers into a glass jar and store in a closed cabinet for up to a week or in the fridge for two weeks. Enjoy with dips, cheeses, or soups!
