A well-known Midwestern fast-casual chain is facing one of the biggest crises in its nearly six-decade history after abruptly closing restaurants, laying off employees, and grappling with payroll issues that left some workers waiting for multiple paychecks.
Beef-a-Roo confirmed this week that it has implemented companywide layoffs as it restructures operations, while employees continue to deal with uncertainty surrounding unpaid wages and the future of the brand.
Closures spread across multiple states
The Rockford, Illinois-founded chain has closed 15 locations across Illinois, Missouri, Indiana, Kansas and Arkansas. Eight restaurants in the Rockford area have permanently shut down, while seven additional locations were initially described as temporary closures as part of what the company called a “strategic operational restructuring.” The company’s website also went offline, adding to concerns among customers and employees.
“This decision affects every level of the organization and was made only after all other available options had been exhausted,” Beef-a-Roo said in the email. “We recognize the significant impact this decision has on you and your families. We are sincerely grateful for your hard work, dedication, and commitment to the Company.”
Payroll problems fueled employee unrest
The closures follow weeks of payroll disruptions that prompted employee protests and walkouts at several locations. Workers reported delayed or missing paychecks, with some saying they went unpaid multiple times before stores ultimately closed. Company leadership attributed the delays to a funding interruption and said efforts were underway to secure payroll and pay employees in full.
Uncertain future for the chain
Founded in Rockford in 1967, Beef-a-Roo expanded to nearly 30 locations across several states after changing ownership in 2019. While company leaders say the restructuring is intended to preserve the brand’s long-term future, no reopening timeline has been announced for the temporarily closed restaurants, and the total number of employees affected by the layoffs has not been disclosed.
