Cut carbs, not sweets!
Cutting down on carbs doesn’t mean cutting out sweet treats! These Low-Carb Cookies are quick to whip up and take only 6 ingredients. Make a large batch and keep them in your fridge for an easy snack when you have a sweet craving!
One of the best low-carb ingredients is almond flour. It has a quarter the amount of carbs when compared to wheat flour. It is also full of protein, fiber, and vitamins. When mixed with nut butter, chopped nuts, and a keto-approved sweetener, almond flour can make the most delicious low-carb cookies.
In our Low-Carb Cookies recipe, we use a creamy peanut butter. The nuttiness of the peanut butter compliments the sweetness of the almond flour. But you can use your favorite nut butter instead! Adding chopped almonds provides a crunchy texture, though can be omitted if you would prefer a smooth cookie.
There are many keto-approved sweeteners, from liquids to powders. We chose a liquid sweetener to add moisture to the batter, along with sweetness. A powdered sweetener would work, too, but more almond milk may be needed to balance the moisture content.
Ingredients for Low-Carb Cookies
Almond Flour – Almond flour is an awesome keto-friendly flour for low-carb baking. Compared to wheat flour, it has a quarter the amount of carbs!
Chopped Almonds – Chopped almonds add a great crunch and texture to the cookies. If you prefer, you can swap them for another chopped nut or skip altogether.
Salt – We used pink Himalayan salt in the batter, as well as sprinkled flaky sea salt on top of the cookies once removed from the oven. Salt + peanut butter just go so well together!
Nut Butter – Pick your favorite! We used peanut butter, but butters made from almonds, walnuts, or macadamia nuts would be delicious, as well.
Keto-Approved Sweetener – We used a liquid keto-approved sweetener that adds the perfect amount of sweetener and moisture. If you use a powdered sweetener, your batter may need a bit more milk to combat the dryness.
Almond Milk – Milk is needed help combine all the ingredients together. Start with 1 tablespoon, then add more as needed. We used almond milk in our recipe as it has very low carbs when compared to cow’s milk.

How to Make Low-Carb Cookies
Step One: Heat oven to 325 degrees.
Step Two: Add dry ingredients into a bowl and mix, then make a well.
Step Three: Pour each wet ingredient into the well and mix until just combined. Add in keto-approved chocolate chips, if desired.
Step Four: Scoop dough by the tablespoon and roll into balls, then place on a pan. Press a few almond pieces into each.
Step Five: Bake in oven for 8-10 minutes, until cookies are lightly brown. Remove from oven and sprinkle with flaky salt (optional), then let cool.
Step Six: Store in an airtight container in the fridge for up to a week. Enjoy!
