What are Pine Nuts?
Pine nuts aren’t actually nuts at all – they are seeds from pine trees! It can take around 10 years for a pine tree to begin producing the kernels. They are found on the underside of pine cones which, once mature, will split and expose the seeds for gathering.
These tiny seeds are actually nutrient dense! Pine nuts are packed with vitamins, antioxidants, and fatty acids. They are touted to help prevent heart disease, increase metabolism, and boost weight loss. Pine nut oil has been used for years as a base for cooking, medicines, and as a natural skin emollient. Pine nuts have benefits all-around!
Pine Nut Butter is a versatile recipe because it works in either sweet or savory ways. The seeds have a mellow flavor, so the butter works well as a base for sauces or dressings, but also swirled on top of brownies or oatmeal. You can mix in additional ingredients to enhance the flavor profile, like chocolate or herbs. There is almost no end to the utility of pine nut butter!
Ingredients
Pine Nuts – Pine nuts are seeds that come from a pine tree and have a mellow, buttery taste. Blending them creates a versatile spread that pairs well with both sweet and savory dishes.
Oil – Since pine nuts are so small, they cannot produced enough natural oils to blend into a butter. Using a few teaspoons of oil, such as olive or avocado, will give the seeds enough moisture to turn into a creamy consistency when in the food processor.
Salt – Just a pinch of salt is needed to enhance the natural flavor of the pine nuts!
