A Chocolate Lover’s Delight
Who doesn’t love chocolate?! I absolutely do! And these Almond Flour Chocolate Cookies are in my top three favorite cocoa flavored treats! Right next to chocolate cake and a classic chocolate bar. Yum! These cookies are deliciously rich. Since they are made with almond flour, they are also gluten-free! Those with gluten intolerance rejoice!
Baking with almond flour can be tricky, but having proper ingredient ratios and avoiding over-baking will yield fantastic chocolate cookies. Chocolate pairs very well with almond flour as the sweetness of the cocoa compliments the nuttiness of the almond.
These Almond Flour Chocolate Cookies taste heavenly on their own, but can also be used to create additional desserts! Crumble the cookies on top of ice cream for a chocolate chunk sundae; add strawberry slices or raspberries on top of each cookie bite; or whip up a batch of frosting and make chocolate cookie sandwiches. Delectable!
Ingredients for Almond Flour Chocolate Cookies
Dry Ingredients
Almond Flour – Almond flour makes amazing chocolate cookies! It has a subtle nuttiness and chewy texture that pairs very well with the cocoa flavor. It is also naturally gluten-free!
Coconut Flour – Coconut flour is another common gluten-free ingredient and acts as a binder for the ingredients in this recipe. It is highly absorbent and bakes into a very soft cookie.
Cocoa Powder – Cocoa powder gives these cookies their deliciously chocolate taste!
Chocolate Chips or Chunks – We recommend at least 1/2 cup of chocolate chips or chunks, but don’t be afraid to add more! 😉
Baking Soda – Baking soda is the leavening agent in these cookies that keeps them from going flat. The combination of almond flour and coconut flour allows these cookies to be stable enough and they will only rise slightly.
Salt – Try sprinkling some salt on top of the cookies before they go in the oven, it’s delicious!
Wet Ingredients
Milk – Cow milk or almond milk, whatever you prefer to use, use it! This recipe works with both dairy and non-dairy varieties.
Maple Syrup – Maple syrup is our sweetener of choice because it adds extra moisture. However, feel free to use granulated sugar, brown sugar, or coconut sugar instead. Keep in mind the flavor and texture will change slightly.
Butter – Butter has such a rich flavor and helps emulsify the ingredients together.
Vanilla Extract – Vanilla and chocolate are a delicious pairing! Vanilla bean paste can be swapped 1:1.
Apple Cider Vinegar – Apple cider vinegar is the reactant for the baking soda to provide a slight rise to the cookies.
