Almond Flour – Reach for your favorite brand of almond flour for this recipe. This is a healthy almond flour cookies recipe.
Maple Syrup or Honey – If you want vegan cookies reach for maple syrup, otherwise you can use honey. This is going to create the sweetness in the delicious cookies but also help the cookies hold shape.
How to Make Almond Flour Cookies

Step One: Preheat the oven and then prep your prepared baking sheet. I used coconut oil for greasing the pan to prevent the cookies from sticking.
Step Two: In a small bowl add your blanched almond flour and then add in the maple syrup. Mix well until the dough is sticky and wet.
Step Three: Use a tablespoon to scoop out each piece of dough and place it on a parchment lined cookie sheet. Grease your hands and roll each ball of dough to form a smooth ball.
Step Four: Then, oil the bottom of a measuring cup and flatten each cookie. I made my cookies thick, but if you like crispy cookies, you can flatten them thinner.

Allow time for the cookies to fully cool. They will have soft centers but the outside of the cookies will be baked a bit more. Allow them to fully cool to create a firmer cookie.
