These easy Peanut Butter and Jelly Sandwich Cookies are so tasty; the best part is that they are keto-friendly!
Peanut butter cookies are one of my all-time favorites. I love anything peanut butter, but peanut butter + jelly in a cookie is incredible!
While you can make this recipe with coconut flour, I experimented with almond flour and found the taste and texture were better for these sandwich cookies.
Then I made a filling with creamy peanut butter, butter, cream, and confectioner sugar substitute (swerve). The filling is creamy and lightly sweet with a lovely peanut butter flavor. Topped the peanut butter layer with jam and made a delicious sandwich cookie!
How To Make Keto Peanut Butter & Jelly Cookies
For this recipe, you will need creamy peanut butter (make sure there are no added sugars in the peanut butter), butter, cream, sweetener, almond milk, baking powder, almond flour, and jelly or jam.
To start, you will make the peanut butter cookies. First, mix all the cookie dough ingredients in a mixing bowl until smooth. Then, roll 16 evenly sized balls out of the cookie dough. Place the balls on a parchment paper-lined cookie sheet and flatten them slightly with your hand. Next, use a fork to make cross designs across each cookie. Bake the cookies for 10 minutes and let them cool completely before filling them.
Next, you’ll make the filling by combining the peanut butter, butter, cream, and sweetener. Cream the mixture together until smooth. Then spread the peanut butter filling on the bottom of 8 cookies. Then, apply the jam on the bottom (flat side) of the other eight cookies.
Put the cookies together to make sandwich cookies. Serve and enjoy!

- I don’t have sugar-free jelly; what can I use instead? You can follow the instructions as written but leave out the jelly. The cookies will taste more like nutter butters instead of pb&j!
- How do I make these cookies dairy free? This recipe can be dairy free easily by substituting coconut oil for the butter and coconut cream for the heavy cream.

Ingredients
For the cookies:
- 1 cup almond flour
- 1/2 cup natural peanut butter
- 2 tabelspoon almond milk
- 1/4 cup swerve confectioners sugar substitute
- 1/2 teaspoon baking powder
For the filling:
- 3 tabelspoon butter, softened
- 4 tablespoon natural peanut butter
- 1/2 cup Swerve confectioners sugar substitute
- 2 teaspoon Heavy whipping cream
- 1/4 cup jelly (sugar-free for keto)
Instructions
- Preheat the oven to 325 degrees.
- In a mixing bowl, combine all of the ingredients for the cookies. Blend until smooth.
- Form the batter into 16 individual balls, and flatten slightly with your hands.
- Place the cookies onto a parchment-lined baking sheet.
- Use the tines of a fork to make a cross design on the top of each cookie.
- Bake for 10 minutes.
- Remove, and allow to cool to room temperature.
- Mix the butter, peanut butter, and sugar substitute until smooth.
- Add in the heavy whipping cream for the filling, and blend again until creamy.
- Spread the peanut butter filling onto the bottom of 8 of the cookies.
- Spread the jelly onto the bottom of the other 8 cookies.
- To form a sandwich, place one peanut butter and jelly-filled cookie together. Repeat until all eight sandwich cookies are together.
