Coconut cinnamon cereal ingredients + substitutions
- 1 cup unsweetened shredded coconut
- ½ cup raw sunflower seeds
- 1 tablespoon ground cinnamon
- ¼ teaspoon sea salt
- ¼ cup maple syrup
- 1 large egg
- ½ teaspoon melted coconut oil
Possible substitutions: You can use a different sweetener if you prefer, such as honey, but I prefer maple syrup!
How to make coconut cinnamon cereal
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
- Place the coconut shreds and sunflower seeds in a food processor and grind for 30 seconds.
- Add the cinnamon, salt, maple syrup, egg, and coconut oil and pulse until combined, about 2 minutes.
- Scoop the mixture onto the prepared baking sheet. Cover with a second piece of parchment paper and with a rolling pin, roll to ¼-inch thick. Remove and discard the top piece of parchment paper.
- With a wet knife, score the dough into 1-inch squares.
- Place in the oven and bake for 10 to 15 minutes, until firm to the touch. Remove from the oven and let sit on the pan for 15 minutes to allow it to crisp up.
- Store in an airtight jar in the refrigerator for up to 1 week.

instead of egg you can try applesauce – since this is or looks un-leavened you don’t need to worry much about puff or leavening agents here – an egg is about 3T. of liquid. This is from my baking tech book – I was a baking and pastry arts major way back in the day and now looking to convert all my know how with regular flours etc. to gluten free – it’s been a fun process. 😉 hope this helps.

This sounds good, but I don’t have sunflower seeds on hand. Do you suppose that either almonds or almond flour would work just as well?

I just made this using Macadamia nuts ( have sensitivities to almonds and sunflower seeds) and it turned out fine. I also used honey ,When making again I will use less honey as it is sweeter than maple syrup.

Almonds and almond flour, as well as other nuts and flours, slow the metabolism and slow the Brain, I would Not suggest any Nuts except Coconut, as Coconut does not have this slowing effect on the Brain and Metabolism. Nut can also be rancid or have mold and mildew on them when you get them.
