Not only is this almond cake recipe egg-free, it is also gluten-free thanks to the use of almond flour! Almond flour is made from finely ground almonds and contains no gluten, so it is perfect for those with celiacs or those avoiding gluten in their diet. Because it is made of purely almonds, it needs a secondary flour or starch to give it structure when baking. For this circumstance we use potato starch! Potato starch is extracted from potatoes and is used as a thickener in cooking and baking. In our Eggless Almond Flour Cake, potato starch works as a binder and stabilizer – just like eggs!

Canola oil is another star ingredient in this recipe! The oil mimics another characteristic of eggs in that it adds moisture to the cake. Through the hydrating oil, the texture of the cake becomes tender and soft. Feel free to test out other oils to slightly change the flavor. Olive oil would add a deeper flavor profile while a nut oil would enhance the nuttiness.
Ingredients for Eggless Almond Flour Cake

How to Make Eggless Almond Flour Cake
Step One: Preheat oven to 350 degrees. Prep a cake tin with oil or parchment paper.
Step Two: Mix dry ingredients in a bowl and set aside.


Step Three: In a separate bowl, mix together wet ingredients.
Step Four: Pour wet ingredients into the dry ingredients. Fold until just combined, being careful not to overmix.



Step Five: Pour cake mix into the prepared pan and top with sliced almonds. Bake in oven for 35 minutes.
