If you’re looking for a delightful treat, look no further than this ice cream! It’s the perfect thing to whip up when you’re just straight up looking for (nearly) immediate gratification and don’t feel like putting your shoes on, and jumping in the car, calling an Uber, grabbing your bike, or reaching for bus fare. (Yes, I can be that lazy!)
Just 4 pantry (and 1 freezer) ingredients, and you’re ready for homemade ice cream – without a machine!
Strawberry coconut no-machine ice cream ingredients + substitutions and tips
To make this delicious recipe you’ll need:
- 2 ¼ cups frozen sweetened strawberries
- 1 (13.5 oz.) can coconut milk, chilled
- 2 teaspoons organic maple syrup (“Grade A” preferable)
- ½ teaspoon vanilla extract
- 1/8 teaspoon kosher salt
If you like strawberries on the sweeter side…increase maple syrup to 2 tablespoons.
I like to start with everything chilled when making dairy free ice cream. So, refrigerate the coconut milk for 30 minutes, and freezing the loaf pan also gives the ingredients something cold to nestle into which helps jump start the process!
Also, this ice cream is perfect when it’s been frozen for 2-3 hours. If you’d like to enjoy it after it’s been frozen for a longer period of time, just let it defrost for ½ hour or so.
