White Castle is making room on its permanent menu for a slider that does not start with beef.
The chain has announced the Southwest Veggie Slider, a new meat-free option being added systemwide. For a brand built on small square burgers, that is a notable shift – especially because this is not being pitched as a short-term test.
It is in fact joining the core menu!

What is in the new slider?
The Southwest Veggie Slider uses a Dr. Praeger’s veggie patty made with ingredients including sweet potatoes, black beans, corn, red bell peppers, onions and carrots. The patty is seasoned with smoky chipotle and sweet BBQ flavors, giving it a distinctly Southwest character beyond just the name.
The patty has a crispy brown rice crust and is served on White Castle’s signature bun with jalapeño cheese, though customers can choose other cheese options.
The slider is available now at White Castle restaurants nationwide, starting at $2.49.
Why White Castle is doing this
The move gives White Castle a meat-free option for customers who may not want a traditional burger but still want something that feels like a fast-food slider. It also marks the end of White Castle’s seven-year partnership with Impossible Foods — the Southwest Veggie Slider effectively replaces the Impossible Slider that had been on the menu since 2019.
That matters because plant-based eating has become a complicated space for restaurants. Some customers want vegetarian options, while some chains have pulled back after early excitement around meat alternatives cooled.
White Castle appears to be taking a more practical route: a vegetable-based slider with familiar fast-food flavors instead of a menu item that tries to imitate beef.
Who might order it
This item is not only for strict vegetarians.
It could appeal to customers who want a lighter option, people cutting back on meat, or groups where one person wants White Castle but another wants something without beef.
The jalapeño cheese and Southwest-style flavor also give it a little more personality than a plain veggie burger.
What customers should know
As always, customers with dietary restrictions should check ingredients and preparation details directly with the restaurant, especially if they avoid dairy or are concerned about cross-contact.
But for White Castle fans who have been asking for more variety, the headline is simple: the slider menu has a permanent new option, and this one is built for the non-burger crowd.
