Are you dreaming of a mediterranean summer meal? This breakfast toast has all the right things. Thinly slice, season, and roast a zucchini, an eggplant, and a red bell pepper. You can use other veggies if you have any combinations in mind! I like this one for its mix of flavors. Roast at 390 degrees Fahrenheit for 10 minutes, then set aside to cool. Toast your preferred bread and spread it with soft ricotta. Top with your roasted veggies. As a dairy-free alternative to ricotta, hummus works really well in this one!

Roasted Eggplant and Walnuts
A Middle Eastern spin on avocado toast, this roasted eggplant spread is easy to make, and you can customise it with flavorings and spices of your choice. Slice a couple of eggplants in half lengthwise. Rub a little oil on the insides and place them skin-facing up in a 390 degrees Fahrenheit oven. Bake for 10 minutes. Allow to cool until safe to touch. Scrape the soft-cooked eggplant out of the skin into a bowl. Add crumbled walnuts, olive oil, and any other seasonings you like. Spoon onto your toasted bread.

Nut Butter and Banana
Have you got a bit of a sweet tooth? This kid-friendly toast is probably the most simple to make of the bunch. An Italian favorite, cannellini beans make such a good blended dip, and combined with the well-roasted cherry tomatoes, it’s a smooth, slightly sweet, creamy and tangy toast all at once. A really pleasing one with all the flavors and textures! Drain and thoroughly rinse a jar or can of cannellini beans. Make sure they are well rinsed because it helps with digestion! Put them into a food processor with some olive oil, lemon juice, basil, oregano, salt and pepper and garlic powder. Blend until combined. Slice your cherry tomatoes in half and put them face down in a baking tray. Drizzle with olive oil and season with salt and pepper. Bake for 10 minutes at 450 degrees Fahrenheit or until the tomatoes blister. Remove to cool. Toast your bread, and then smear with the white bean concoction and top with the cherry tomatoes. Garnish with basil.

Mascarpone, Peaches, and Honey
I am saving the best for last. With the tangy, juicy peach slices and the creamy, sweet mascarpone, this toast may not be the healthiest, but boy, is it delicious! If peaches are not in season, you can use almost any other fruit, like mixed berries, strawberries, or even pear or apple. Slice and toast your bread of choice. While the bread is toasting, slice your peaches thinly. As soon as the bread is ready, smear a generous amount of mascarpone on the top. Add the sliced peaches. Drizzle with some raw, organic honey and enjoy!
