I love pasta dishes, but they haven’t been on the menu much since I started cutting out starches a few years ago.
I tried replacing my favorite pasta dishes with spaghetti squash and zucchini noodles, but it isn’t the same. About six months ago I decided to try shirataki noodles. Oh. My. Goodness… These noodles are so good and are very versatile.
I’ve pretty much replaced all my pasta dishes with these noodles and love eating keto pasta now! My favorite way to eat these noodles is in baked feta pasta. This low-carb pasta dish is a real treat and full of great flavor!
How To Make Baked Feta Pasta – Keto Style
The original baked feta pasta dish is made with spaghetti noodles; for this keto version, I used shirataki noodles. Of course, you may use different keto-friendly noodles instead of shirataki noodles (read in the FAQ section for keto pasta variations).
Ingredients for baked feta keto pasta: one block of feta cheese, 8 ounces of shirataki noodles (or your favorite keto pasta), one pint cherry or grape tomatoes, 6 ounces of black olives, three cloves of garlic, 2 tsp Italian herb mix, sea salt and olive oil (approximately one cup).
01 Rinse tomatoes and set them aside to dry. Preheat the oven to 350 degrees F.
02 Grease an 8×8 inch pan with olive oil. Spread the tomatoes, olives, and garlic over the dish.
03 Place the block of feta into the middle of the pan, moving the tomatoes and olives around it. Sprinkle with seasoning and salt. Then drizzle with olive oil; I used about 1/2 cup.
04 Bake the feta and veggies in the oven for 45 minutes, or until the feta is cooked and golden brown.

05 While the feta is baking, prepare your pasta of choice. If you’re using shirataki noodles, you will need to rinse them well before adding them to this dish. If you’re using a different keto pasta option, you’ll want to have it ready to add to the baked feta.
06 When the feta is finished baking, carefully remove the pan from the oven.
07 Add the keto pasta noodles to the feta dish, mixing the feta and veggies into the noodles.
08 Return the keto-baked feta pasta to the oven for 5-8 minutes, or until the noodles are cooked and warm.
09 Remove the keto pasta from the oven and serve.

Shirataki noodles are made from glucomannan, a starch found in the Japanese konjac yam. This starch is very low carb, low fat, and only contains ten calories per serving. These noodles have a strong, fish-like smell when you first open them. Don’t be alarmed; this is normal. Once you rinse them well, they don’t smell or taste like anything.
