Tropical drinks are my go-to cocktail of choice. I love light drinks with tropical flavor and this Chi Chi drink is on top of my list!
While I love a good piña colada, I prefer vodka and that’s what makes Chi Chi drinks different from coladas. There’s no rum and usually have vodka or flavored vodka.
This chi chi recipe is simple to make and only requires three ingredients: pineapple juice, cream of coconut and vodka! Below I share my simple recipe and also include variations and instructions on how to use coconut milk instead of cream of coconut.
How To Make Chi Chi Tropical Drink
For this recipe you will need a whole pineapple, cream of coconut, ice and your favorite vodka. I prefer to make this drink blended, so a high speed blender is needed as well.
Juice half the pineapple and chop the other half into pineapple slices to garnish the cocktails.
Next, pour the pineapple juice, cream of coconut and ice into a blender and blend until smooth and frothy. The blended drink with have a creamy coconut consistency.
Pour the cocktail into two serving glasses and garnish with pineapple wedges.

Shaken Chi-Chi Cocktail
If you prefer you drink shaken, follow these instructions below.
Mix the pineapple juice, vodka, and cream of coconut tighter and pour into a cocktail shaker. Shake the mixture and pour over ice and serve with pineapple wedges.
Ingredients & Variations
- Pineapple Juice – Fresh pineapple juice is best in this recipe but you can opt for canned.
- Cream of Coconut – Not to be confused with coconut cream or coconut milk! Cream of coconut is simmered coconut milk with sugar. If you don’t have cream of coconut, you can make it at home with this cream of coconut recipe.
- Vodka – Use your favorite brand name of liquor, I usually buy Prarie Organic Vodka.
- Optional Lime – I like to add a splash of fresh lime juice to at tang to this delicious drink!
FAQ
No, the two are not interchangeable. You can however, make cream of coconut at home from coconut milk.
Chi chi cocktails are made with vodka while pina coladas are made with rum.
A skinny Chi Chi is slightly different as you don’t use cream of coconut and instead use coconut water and coconut liquor to add coconut flavor. Try this Skinny Chi recipe if you’re looking to avoid the calories in cream of coconut.
