I’ve made a lot of different recipes, but this pineapple coconut juice is my favorite! It’s made with a combination of fresh pineapple juice, coconut water (fresh or bottled), and a squeeze of lime juice. This juice reminds me of the fruit pouches I used to drink as a kid, just healthier! This is a great drink to make after working out since it’s rich in minerals and electrolytes.
How To Make Pineapple Coconut Juice
For this recipe, you will need half of a ripe pineapple, coconut water, and lime.
Core and chop the pineapple up and run it through your juicer. You will need 20 ounces of pineapple juice; save any extra for other recipes like my virgin pina colada or chi chi drink!
Next, mix the pineapple juice with the coconut water and add a splash of fresh lime juice. Pour the pineapple coconut juice into two glass cups with ice and serve.
How To Make Fresh Juice in a Blender
If you don’t have a juicer, you can still make this delicious tropical drink! Chop the pineapple up into bite-size pieces and place it into a high-power blender. Then, pour in the coconut water and blend on high speed for a few minutes. Next, pour the juice through a fine mesh strainer lined with cheesecloth. Add a splash of lime juice and serve the pineapple coconut juice over ice.
