Feel like you’re on vacation in Mexico with this yummy Chicken Cilantro Lime Soup. It has all the flavors of Mexico with cumin, lime, jalapeno, and cilantro.
This chicken lime soup is made on the stovetop but you could easily make it in a slow cooker or your Instant Pot.
The recipe is extremely versatile. You could take it up a notch and roast the jalapeno peppers, onion, and tomatoes for extra flavor. I added cauli rice to make the soup more hearty.
If you prefer your soup to taste extra spicy, simply add more spice by adding serrano peppers or a little bit of a Mexican hot sauce.
This would be a great weeknight soup since it’s extremely easy to make. You simply add the chopped garlic, jalapeno peppers, onion, tomatoes, and cauli rice to a pot and saute until soft.
Then add your chicken, spices, and broth, and allow the chicken to cook until tender.
Then before serving, shred the chicken, add the lime juice, and fresh cilantro, and dinner is ready!

Ingredients
- 4 garlic cloves, peeled and finely choppedÂ
- 2 jalapeno peppers, deseeded, dicedÂ
- 1 medium onion, dicedÂ
- 4 Roma tomatoes, deseeded, dicedÂ
- 2 cups cauliflower riceÂ
- 2 boneless, skinless chicken breasts (I buy my meat from here)Â
- 1 tsp dried oreganoÂ
- ½ tsp ground cuminÂ
- 6 cups chicken broth (this is my favorite store-bought bone broth)
- 1 limeÂ
- 1 cup chopped fresh cilantroÂ
- 1 ripe avocadoÂ
- Olive oil (I love this brand)
- Salt to taste
Instructions
- Chop up the garlic, jalapeno peppers, onion, tomatoes, and cauliflower rice. Add to a 3-quart pot with some olive oil and some salt. Saute on medium-high for 10 minutes.
- Add the chicken breast, oregano, cumin, and chicken broth to the pot. Bring to a boil and then simmer on medium-low heat for 45 minutes, stirring occasionally.
- Remove the cooked chicken, and using two forks, shred the chicken and add it back to the pot.
- Add the juice of one lime and chopped cilantro to the pot. Taste the broth and add extra salt if needed. Â
- Serve the lime soup with slices of avocado and extra lime wedges.Â

This recipe is easy to adapt for a slow cooker. Simply place all of the ingredients into the slow cooker (except for the lime juice and cilantro), and turn the heat to high and cook for 4 hours or turn it to low and cook for 6 hours. Before eating, shred the chicken, and add the lime juice and fresh cilantro.
