Coconut Cookie Dough Bites – Consider this recipe the paleo version of raw cookie dough/no bake cookies made healthy with simple ingredients that most people will find in their pantry!
My mom made the yummiest no-bake cookies growing up! I always loved making cookies with her and now I love to make them with my own kids. This recipe is based off my moms except I left out the oatmeal and add coconut flakes in it’s place. I used macadamia nuts but other nuts or nut butters can be used instead.

How to Make Coconut Cookie Dough Bites
Ingredients:
- 1/2 Cup macadamia nuts, Roasted. Macadamia nut butter can be used in place of nuts. If you don’t have macadamia nuts you can use almond butter or peanut butter.
- 1/3 Cup raw honey or Date Paste
- 1/2 Teaspoon vanilla extract
- 2 Tablespoons Coconut Oil
- 2 Cups Shredded Coconut Flakes
- 1/4 – 1/2 Cup Soy Free Chocolate Chips
- Shredded coconut flakes (Optional)
Instructions:
- You’re going to start with a blender or food processor. Blend the macadamia nuts together until they’re smooth butter. Add raw honey, vanilla extract and coconut oil and continue to blend mixture until all the ingredients are combined.
- Mix the shredded coconut flakes and chocolate chips into batter.
- Refrigerate cookie dough for approximately 30 minutes.
- Use a small cookie dough spoon to scoop each cookie dough bite out of the batter.
- Use your hands to roll each piece into a smooth ball.
- Spread the shredded coconut flakes over a plate and roll each cookie dough bite in them until they’re completely covered with coconut.
- Return the cookie dough bites to the refrigerator to prevent from getting too soft.
- Serve the coconut cookie dough bites cold. Enjoy!

Thank you for all the wonderful recipes! I unfortunately can’t have chocolate, cocoa or carob so I may have to try these without the chocolate chips! Hopefully they’re still as good! I also can’t have dairy so thankfully I’ve steered clear of that one here! I do notice that very many of your recipes have chocolate or cocoa in them, though.. I would appreciate more non-chocolate recipes, please!! Also, for the ones that have dairy, possible alternatives (i.e. to butter, cream cheese, etc.) Love that you’re doing this blog!!
A nice variation would be to use raisins instead of chocolate chips and use cinnamon in addition to or instead of vanilla.
Cranberries are also yummy
