Gluten-free baking can be fun and simple to do, as long as you have the right ingredients. This flour blend is so fast to make and is packed with nutrients for extra nourishing bakes! When shopping for ingredients, purchase items without additives and look for organic when you can.
The main component of our Homemade Gluten-Free Flour Blend is garbanzo fava flour. Garbanzo beans, also known as chickpeas, are dried and mixed with dried fava beans then grounded into a powder. Chickpeas are full of protein, fiber, and lots of vitamins. Once dried and ground, the resulting mixed flour is dense enough to have its own binding abilities. But in order to achieve a more even texture and moisture level in bakes, we use a few other ingredients to complete the gluten-free flour blend.
Potato starch and tapioca flour are added to the garbanzo fava flour to help with the consistency of recipes. Potato starch is derived from potatoes and tapioca flour comes from the cassava root. Tapioca flour is actually a starch and can be labeled as such at the store. Each ingredient is very absorbent and can give baked goods a chewy or crispy texture, depending on how much is added.
This Homemade Gluten-Free Flour Blend is quick to make and can be stored in your pantry, (in an airtight container), for up to two months.
Ingredients for Homemade Gluten-Free Flour Blend
Garbanzo Fava Flour – Garbanzo beans (or chickpeas!) are full of protein and fiber, as well as being naturally gluten-free. When mixed with fava beans, this legume-derived flour is an excellent choice for gluten-free cooking in both savory and sweet bakes.
Potato Starch – Not potato flour! Potato flour is a totally different, so ensure you are using potato starch specifically. Potato starch will support the a tender texture in baked goods.
Tapioca Flour – Tapioca flour, (also called tapioca starch), is a thickening agent that helps even out the texture of baked goods, as well as acts as an ingredient binder.
Xanthan Gum (Optional) – Xanthan gum is a common addition to gluten-free bakes because it adds elasticity which, in regular flour, comes from the presence of gluten. It is optional for this flour blend, but we recommend adding it if your baked goods seem to crumbly.
