Who says dairy free ice cream has to be boring? This Mint Chocolate Chip Ice Cream recipe is delicious, without a drop of dairy.
I’ve been testing dairy-free coconut milk ice cream recipes for an e-book I hope to release sometime this summer. I made this mint chocolate chip ice cream last week and it was a huge hit with the kids! (I’ve also tested great dairy-free recipes for chocolate ice cream, banana ice cream, and coconut ice cream. But I digress…)
This recipe is super simple, super easy to make, pairs amazingly with my dairy-free magic shell recipe, and is super refreshing on a hot summer’s day.
How to make dairy-free mint chocolate chip ice cream
First, let’s talk ingredients.
All you need is two cans of coconut milk, raw honey, peppermint extract, chocolate chips, and an ice cream maker.
Yes, you can use other dairy-free milks to make ice cream, HOWEVER – coconut milk and coconut cream really have the thickness and body you associate with good ice cream, I’ve found a lot of other dairy-free milks to be a little too thin. I wouldn’t recommend substituting other dairy milks for coconut milk in this recipe, because it’s designed with coconut milk’s thickness in mind.
Ok, once you’ve gathered your ingredients, the recipe is super easy from there.
- Start by mixing everything aside from the chocolate chips together in a blender or bowl.
- Mix in your chocolate chips, and then pour everything into the ice cream maker.
- Have the ice cream maker do its thing.
That’s it!

- 2 cans coconut milk
- 1 cup honey
- 1 teaspoon peppermint extract
- pinch of salt
- 1 cup soy free chocolate chips
Instructions
- Mix all ingredients except chocolate chips together in a bowl or blender.
- Mix in chocolate chips and pour into ice cream maker.
- Freeze according to ice cream maker’s manufacturer’s instructions




This was a total flop for me…stayed a liquid. Not sure what went wrong. 🙁

Hmm. Not sure why. Where your ingredients cold when you poured them into the ice cream maker? Which ice cream maker do you use?

This was delicious! I don’t have an ice cream maker though, so I first tried the (put in a pan in the freezer and stir every 30 min.) method, but I didn’t use a flat pan and it was taking a long time and my stir helpers were “tasting” it so much every stir that I put it in popscicle molds. That worked fine except the carob chips were all at the bottom. It still tasted great though. I think next time I’ll leave out the chips. Since I’m expecting and really only wanting the mint anyway.
Can this recipe be done without an ice cream maker?
