Now, once you combine that with granulated sugar and a kiss of vanilla extract – well – let’s just say you have the foundation for everything wonderful in the world.
(Okay, that was a bit of an exaggeration, because there are so many wonderful things in the world to choose from! But, you get the idea. This simple syrup is fabulous!)
Now, shake up some of that wonderful syrup with a ton of ice, and some espresso.
Then, pour it into a glass full of ice and top it with creamy oat milk.
Sure, you didn’t feel badly before you drank this icy concoction, but I bet you’ll feel a whole lot better than you can imagine once you finish the glass!
Do I have to use oat milk in this drink?
You can use any type of milk that makes you happy! Any type of milk you enjoy, you’ll love combined with the vanilla syrup and coffee. I just happen to really love the natural rich flavor of oat milk in this drink. What is it about oat milk that makes it so amazingly creamy? The only thing I know is that once the carton is open, the smile on my face gets wider.

Starbucks Toasted Vanilla Oat Espresso (Copycat Recipe)
Toasted vanilla simple syrup creates a base for this incredibly delicious iced espresso!

Ingredients
Toasted Vanilla Simple Syrup Ingredients:
1 vanilla bean, halved and roughly chopped
1/2 cup water
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
Toasted Vanilla Oat Espresso Ingredients:
Ice
2 shots espresso
2 1/2 tablespoons toasted vanilla syrup
1/2 cup unsweetened oat milk
Instructions
Place the roughly chopped vanilla bean in a small saucepan over medium low heat.
Toast for 2 minutes, stirring frequently.
Add the water, sugar, and vanilla extract into the saucepan.
Stir well.
Bring to a light boil, and reduce heat to low.
Simmer for 10 minutes.
Strain the solids out of the syrup.
Store the syrup into a clean jar, and store in the refrigerator for up to 2 weeks.
Toasted Vanilla Oat Espresso Instructions:
Fill a cocktail shaker with ice.
Add the espresso and vanilla syrup to the shaker.
Shake for 2-3 minutes, or until the container is chilled and is covered in a fine layer of condensation.
Fill a large glass with ice.
Pour the shaken espresso mixture into over the ice, and top with oat milk.
Serve immediately.
