Vanilla flavored coconut sugar is a must have for any paleo baker or coconut sugar fanatic! All you need is coconut sugar and vanilla beans.
Today I’m sharing a tip for making vanilla sugar. I learned this tip from my mother in law. She always keeps a few vanilla beans in her sugar container. The vanilla sugar is soooo yummy in baked goods or added to coffee or tea. All you have to do is slice a few vanilla beans down the center or in half and add them to your sugar container.
In the picture above I have two split vanilla beans mixed with my coconut sugar. Once I use up all the sugar, I add more and keep the vanilla beans in the jar. The vanilla beans will continue to add flavor to the sugar for several months.

Just two ingredients here:
Simple and straightforward. But here’s the thing: Because it’s just two ingredients, you want great quality. I’ve linked above to my favorites, but you can also read my in-depth explainer on how to find the best coconut sugar for your recipes.
And while I’ve done this with coconut sugar, to be honest you can use any type of sugar to make vanilla sugar. We have used coconut sugar, rapadura, organic cane sugar, raw sugar or brown sugar.
Also – and this is important: Make sure to purchase high quality vanilla beans that are fragrant and plump. You will pay a little more for them, but they will last a lot longer. And if you have extras sitting around, make homemade vanilla extract – it’s a real step-up from storebought (and makes a great gift).

Ingredients
- 1 pound coconut sugar
- 1–2 organic vanilla beans
Instructions
- Slice the vanilla bean pods open vertically, starting from the top of the pod and down to the end. Do this on both vanilla beans.
- Add the vanilla beans to your coconut sugar storage container. Keep the beans in the the container until they are no longer fragrant, about 9 months. Then, replace the vanilla beans with fresh beans.

Why did I not think about using different kinds of sugar? All I’ve ever seen is the suggestion for regular white sugar and we don’t eat that anymore. Thank you!!!

You can also use the beans after you took the seeds out of them … do not throw away the empty beans, just put them in the sugar pot!!
