Mug cakes are easy to make and are a fun and easy way to make a quick dessert. All you need is a few simple ingredients and a microwave-safe mug and you can create a delicious single-serving cake in minutes!
This healthy mug cake recipe is made with oats, sweetener and almond milk and is a low calorie and low sugar option.
Healthy Mug Cake Recipe
For this recipe you will need oat flour (or ground oats), coconut sugar, unsweetened cocoa powder, baking powder, salt, coconut oil, vanilla extract, almond milk and sugar-free chocolate chips!
Grease your mug with a cooking spray or a small dab of oil.
Start by mixing the dry ingredients together in a small mixing bowl or directly in your mug.
Then, add the melted coconut oil, vanilla extract, and almond milk. Mix the wet ingredients into the flour mixture.
Lastly, fold in the chocolate chips. Place the mug into a microwave and microwave for 1-2 minutes, or until the batter is cooked. Since this recipe doesn’t have eggs, it can be undercooked in the middle for a lava cake texture.
Substitutions:
- Oat Flour: You can substitute the oat flour for all purpose flour, almond flour, or your favorite gluten free flour.
- Sugar: I used a sugar-free brown sugar, but coconut sugar, regular white sugar or maple syrup will work in it’s place.
- Coconut Oil: Swap for your oil of choice! Avocado, vegetable oil, and olive oil are great options.
- Almond Milk: You can use regular milk, soy milk, coconut milk, or non-dairy milk of choice.
- Chocolate Chips: Use sugar-free chocolate chips or dark chocolate chips.
Serving Ideas:
This delicious mug cake is great on it’s own, but you can top it with more goodies if you like! Here are some of my favorite ways to serve it:
- Top it with your favorite ice cream, whipped cream or greek yogurt
- Serve with homemade chocolate frosting
- Top with fresh berries
