I love smoothies and make smoothie packs for my family regularly. Smoothies are a great way to sneak healthy foods into kids (and adults)! Since I’ve cut back on carbs, I’ve given up on smoothies since they’re a little too high in sugar.
A few weeks ago, I had a jam-packed week, and I needed a quick meal that I could make and take with me. Enter; my keto mojito smoothie!
I picked my favorite ingredients from the freezer and fridge, threw them in the blender, and made this delicious mojito-inspired smoothie.
I usually use frozen bananas to thicken my smoothies, but I found that avocado does the job well. Then for sweetness, I added a few drops of liquid stevia. The mint and coconut added natural sweetness to the smoothie already, and the stevia was just sweet enough to complete this smoothie.
Keto Mojito Smoothie Recipe
Makes 1 serving
Here are the ingredients you’ll need:
- 1 tsp fresh mint or spearmint leaves
- Juice from 1/2 medium lime (1 tbsp fresh lime juice)
- 1 cup ice cubes
- 6 tbsp coconut cream
- 1 handful baby spinach (other mild-flavor greens work too)
- 1/2 cup frozen diced avocado
- 1/2 cup water
- 5-8 drops liquid stevia
- (optional) 1 scoop collagen peptides or vegan keto protein powder
Step-by-step directions:
- Add all the ingredients into the blender.
- Blend the smoothie until the ingredients are blended and smooth.
- Taste the smoothie and add more stevia if needed.
