This maple cream is made with pure maple syrup that is heated and whipped to make a maple spread that tastes delicious served with ice cream, toast, oatmeal, and so many other foods!

Pure maple cream is so tasty and has a creamy texture the spreads like maple butter! This one-ingredient recipe takes some time to make, but is well worth it! Maple cream makes a great gift and is a lovely treat to have on hand for special occasions!
How To Make Maple Cream
For this recipe you will need pure maple syrup, two-medium size pots*, a large bowl filled with ice and a candy thermometer. You will also need a whisk or an electric stand mixer with a paddle attachment.
Place the large bowl and one of the medium pots in the freezer to cool.
*If you are using a stand mixer, place the mixer bowl into the freezer instead of a second pot. Also, make sure the other bowl you are using is large enough for your mixing bowl to set inside of.
Attach the candy thermometer to the medium size saucepan. Pour two cups of pure maple syrup into the pot and bring to a simmer over low-medium heat. Do not stir the syrup.
Remove the large bowl from the freezer and add a generous amount of ice to the bottom of the bowl. Place the pot (or stand mixer bowl) that’s in the freezer over the ice in the bowl.
Boil the syrup until it reaches 235° F. At this point you will remove the pot from the heat and carefully pour the very hot syrup into the cool pot (or stand mixer bowl) in the ice bath. This will help the syrup to cool quickly.
Place the thermometer back in the syrup and wait for the syrup to cool to 100° F. Use a wooden spoon to mix the syrup as it cools.
Once the temperature of the syrup is between 90-100° F, you will want to start vigorously stirring the maple syrup. If you are using a stand mixer, place the mixing bowl into the stand mixer with the paddle attachment and start mixing on medium speed.
Mix for 15-30 minutes, or until the maple cream has a caramel color and begins to stiffen into a spreadable cream.
Pour the maple cream into storage container or mason jars and store in the refrigerator.

Maple cream is basically spreadable maple syrup! Use this creamy spread on:

Can I use a digital thermometer instead of a candy thermometer?
If your digital thermometer goes up to 235° F, then it will work for this recipe. Unfortuanly, most thermometers don’t reach that high of a temperature. Candy thermometers are designed to withstand heat and reach a higher range of degrees than other thermometers.
What type of maple syrup should I use for this recipe?
Use real maple syrup (not pancake syrup). While both light and dark maple syrup work in this recipe, lighter syrup tends to have the best flavor than dark, in my opinion.

- Once the temperature of the syrup is between 90-100° F remove the bowl from the ice bath and place the mixing bowl into the stand mixer with the paddle attachment. Mix on the lowest setting for 10-15, or until the maple cream has a caramel color and begins to stiffen into a spreadable cream. You may place cold packs around the bowl to help the bowl to stay cold while the maple cream forms.
