Don’t just reach for a cup of coffee; if you really want to get some pizazz in your feet, grab this matcha drink.
It’s sweet.
It’s tropical.
It’s both decadent and healthy in the same sip.
You can’t say that about a lot of things.
Or, at least I can’t.
If you’ve never had matcha tea, you really will be stunned at how strikingly vibrant that the color is. It’s nearly a color that you wouldn’t expect to find in nature – even though it’s completely natural.
It’s a drink that I really can’t take my eyes off of, even while I’m reaching for a tall glass of it to chug-a-lug and turn from the present tense “drink,” into a past tense “I drank the whole thing.”
And matcha tea isn’t just a looker, there’s a whole lot of health benefits swimming in that glass. It’s rich in antioxidants, and studies have shown that it may help reduce of LDL cholesterol, protect bone health, and protect brain function.
So, drink up for health! (And pair it with a lime coconut bar as a reward for yourself.)
Also, matcha is considered to be one of the most aromatic teas around, and it’s not bitter.
Now, when you combine all of that with pineapple juice and ginger – well – you’re in for a whole glass of happiness.

Ginger Pineapple Simple Syrup Ingredients:
Yield: 1 ½ cups simple syrup
½ cup granulated sugar
½ cup pineapple juice
½ cup cold water
3 inches ginger, peeled, and thinly sliced
Pineapple Matcha Drink Ingredients:
¼ cup ginger pineapple simple syrup
2 tablespoons matcha
1 cup pineapple juice
1 cup full-fat or light coconut milk (for extra points, you can make your own coconut milk at home)
Matcha pineapple recipe substitutions and tips
- I recommend fresh pineapple juice; however, if convenience is something that might keep you away from this amazing concoction, then by all means reach for store bought pineapple juice to speed up the process! You’ll still have plenty of style points to revel in.
- You can peel and slice ginger and freeze it for even more convenience. Simply place the ginger on a parchment lined rimmed baking sheet, and flash freeze it. Then, place the ginger in a resealable plastic bag for a ready-to-go ingredient.

Ingredients

Instructions
Simple Syrup Instructions:
Bring all of the simple syrup ingredients to a simmer in a medium saucepan over medium heat, stirring occasionally. Reduce heat to low, and simmer for 10 minutes.
Remove from heat, let cool completely, and remove ginger slices.
Pour into a glass jar, and refrigerate.
Matcha Pineapple Drink Instructions:
Pour all of the ingredients into a mason jar and shake very well.
Fill 2 large glasses with ice, and divide pineapple matcha drink between them.
Serve immediately.
