Cucumber season is ending, but I have a plethora of cucumbers that need to be used or canned! One of my favorite ways to use up my cucumbers is to make a cucumber salad.
Cucumber vinegar salad is a simple recipe made with cucumbers, red onions, and a sweet vinegar marinade that balances the tartness of the vegetables. This salad is a beautiful side dish and a great way to get your daily dose of apple cider vinegar!
Cucumber Apple Cider Vinegar Salad Recipe
For this recipe, you will need large fresh cucumbers, red onion, apple cider vinegar, sugar, salt, and water.

Use a sharp knife to carefully slice the cucumbers and onions thinly and set aside. If you have a mandoline slicer, that would be a great tool to use to save time slicing.
Next, make the tangy vinegar dressing by combining the vinegar, water, sugar, and salt together in a small mixing bowl.
Pour the vinegar mixture over the crisp cucumber and onions and refrigerate for at least 20 minutes or up to 4 hours.
When ready to serve, remove the salad from the refrigerator and pour off the liquid from the salad. Serve the cucumber vinegar salad with your main dish, and enjoy!
Store leftover cucumber salad in an airtight container in the refrigerator for up to 5 days.

Cucumber: Any kind of cucumber will work in this recipe. I enjoy both English cucumbers and persian cucumbers in this vinegar salad.

Sugar: You may use your favorite type of sugar or sugar substitute for this salad recipe. I use only 1/4 cup of sugar, bu you may use an amount of sugar you like as some like this salad on the sweeter side.
