The one thing to know about apples, is that they play really well with nearly every type of fruit. I mean, think about it, is there any type of fruit that apples don’t adore?
Heck, apples are so easygoing that they don’t mind getting stained by strawberries, pomegranates, and cherries!
Maybe I should have called this salad, “Amiable Apple and Pomegranate Fruit Salad with Apple Cider Vinaigrette.”
But, I digress.
This salad is tart from the Granny Smith and pomegranates, sweet and punchy from the cherries, and just plain amazingly wonderful from the strawberries and blueberries.
The mint brings a bright bit of sweet freshness to the whole thing, and then it’s enveloped with an apple cider vinaigrette that you’ll want to write home about.
So, get ready to dig in!
Apple and pomegranate fruit salad ingredients, substitutions, and tips
- 1 Granny Smith Apple, cored and thinly sliced
- 2 tablespoons lemon juice, divided
- 1 cup strawberries, hulled and quartered
- 1 cup blueberries
- 1 cup cherries, seeded and quartered
- 1/2 cup pomegranate seeds
- ¼ cup fresh spearmint leaves
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon organic honey
- 1/8 teaspoon kosher salt
You can swap out for different fruit if you want – just know that it’ll change the flavors! Raspberries and blackberries could be great additions in the summer.
Also, you don’t HAVE to use fresh fruit. I mean, fresh fruit is always the cat’s meow, but depending on the time of year frozen fruits may be preferable to what you see in “aisle one.” So, just thaw the fruit according to the package directions, and you’re good to go!
If you’d like to make this salad ahead of time, just toss the apples with lemon juice to keep them from browning. Combine the rest of the fruit in a separate bowl, and store the dressing separately. Then, when you’re ready to serve, just toss everything together in a bowl!
