This easy keto pulled pork is one of my favorite slow cooker recipes and makes a perfect quick meal. Serve with a side of veggies and mashed cauliflower, and you have yourself a quick and easy weeknight meal!
My slow cooker and instant pot are used often in my kitchen to make quick dinners. I love to have easy home-cooked meals on my menu for busy days and this pulled pork recipe checks all the boxes for me. And I love that there are always leftovers for lunches for the rest of the week.
Keto Pulled Pork Recipe
To make this easy pulled pork recipe you will need a pork shoulder roast, swerve brown sugar substitute, paprika, cayenne pepper, garlic powder, oregano, chill powder, cumin, olive oil, sea salt and black pepper.
Start by making a dry rub with the sugar and spice mixture. Combine in a small bowl and set the spice rub aside.
Next, drizzle the pork butt with olive or coconut oil and rub the brown sugar spice mix into the roast.
Then, heat two tablespoons of oil in a large skillet over medium heat. Sear the pork roast on all sides. Transfer the boneless pork shoulder to the crockpot. Pour a few tablespoons of water into the bottom of the slow cooker. Cook the roast on high for 30 minutes, then reduce the heat and cook on low for 6 hours.
Once the keto pulled pork roast is done cooking, durn the heat off and let it sit in its juices for 20 minutes. Use a fork to shred the pork. Transfer the shredded pork to a serving plate and serve.
FAQ
What sides do you serve this roast with? There are different ways to serve this dish! I like to eat this pork on top of mashed cauliflower, or with cauliflower rice. You can also make lettuce wrap, pork nachos, or pork sandwiches with this keto pulled pork.
Can this be made in an instant pot? Yes! Add a cup of bone broth or chicken broth to the bottom of the instant pot and cook on manual high pressure for 40 minutes. Once the cooking time is up, allow the pressure to natural release for 10 minutes, then do a quick release.
Can I use a different cut of meat for this recipe? I have only made this recipe with boneless pork shoulder but a top loin roast is similar in size and texture and can be a good replacement for boston butt in needed.

Ingredients
- 2 1/2 – 3 lb Pork shoulders
- 1/2 cup swerve brown sugar substitute
- 2 teaspoons paprika
- 2 teaspoons cayenne
- 2 teaspoons garlic powder

- 1 teaspoons chili powder
- 1 teaspoons cumin
- Salt and pepper to taste
- 4 tablespoons olive oil, divided
Instructions
- In a mixing bowl, combine the brown sugar substitute, paprika, cayenne, garlic powder, oregano, onion powder, chili powder, cumin and salt and pepper to taste.
- Drizzle the pork shoulder in 2 Tbsp of the olive oil, and rub with the brown sugar mixture thoroughly.
- Heat the remaining olive oil in a skillet over medium high heat.
- Sear the pork on all sides in the skillet, careful not to leave it in place too long to avoid the sugar burning.
- Transfer the pork to the crockpot, and place a tiny amount of water in the bottom.
- Cook on high for 30 minutes.
- Reduce the heat to low for 6 hours.
