Freezing the watermelon works really well in this smoothie. To freeze it, just cut the watermelon up into chunks, and place them on a parchment lined, rimmed baking sheet. Space them about ½-inch apart to ensure they freeze completely, and let them sit in the freezer for about 45 minutes. And voila! Frozen watermelon!

- 3 cups frozen watermelon chunks
- 1 cup almond milk, or other milk of your choice
- ½ cup plain Greek yogurt
- ½ cup fresh or frozen spinach leaves

Substitutions
As written, this smoothie is vegetarian and paleo. To make it dairy-free and vegan, simply replace the greek yogurt with any non-dairy yogurt. (I’d recommend coconut yogurt.)

Feel free to grab whatever type of milk that tickles your fancy! Unsweetened oat milk would be fantastic, and so would regular milk! Go wild with what you have in the refrigerator.
