If you’ve been following me for any length of time you know that I like to learn how to make things from scratch. It’s always fascinating to learn how to make everyday products like coconut oil, beeswax candles, dressing and extracts!
Herbal extracts are simple to make and are a great way to use up fresh herbs from the garden! They also make wonderful gifts for any foodie friend or family member. I make homemade vanilla extract every summer to gift for the holidays. It’s always a welcomed gift that my friends look forward to receiving each year. Other extracts that make great gifts is mint extract, lemon extract, coconut extract and lavender extract!
Cinnamon extract is another extract to add to the list and like the others I listed above, it’s super easy to make. All you need is unflavored vodka alcohol , cinnamon sticks and a mason jar.
How To Make Cinnamon Extract
For this recipe I used fresh cinnamon sticks and organic alcohol.
Clean and sanitize a pint-size jar. Place the cinnamon sticks into the jar and fill the jar with vodka. Store the jar in a dark place for 6-8 weeks. Shake the jar once a week

FAQ
I’ve never used ground cinnamon to make this extract so I’m not 100% sure. Traditionally, cinnamon extract is made with cinnamon sticks.
Ceylon (known as true cinnamon) is my favorite because it has the strongest cinnamon flavor and makes a beautiful extract. It’s the real deal, so it is a bit expensive. That being said both Both Ceylon and Saigon (a cassia cinnamon variety and is the cheapest option) work well in this recipe.
Homemade extract has a long shelf life, about 6 months to a year.
Yes, you can make this extract in an instant pot. I haven’t personally tried it but this tutorial looks promising!

Ingredients
- 5 Cinnamon Sticks
- 2 cups Vodka
- Mason Jar
Instructions
- Clean and sanitize your mason jar.
- Add the cinnamon sticks to the jar and fill with vodka.
- Secure the jar with a lid and place in a cool dark place for 4-6 weeks, the longer the better.
- Shake the jar once a week to mix the cinnamon with the vodka and help with the infusion process.
- After the cinnamon extract is ready, pour the cinnamon extract into a clean glass jar. Label the jar and store in a cool dark place for 6 months to a year.
- Use this extract in place of cinnamon extract in your favorite cinnamon recipes!
