As I write this, the days are getting longer but they’re taking their own sweet time about it!
So, much like when my grandparents used to tell us kids “it’s important to learn how to make your own fun,” we’ve decided to make our own little trip to the tropics with this coconut lime pomegranate mojito.
Because, sometimes when the snow is piling up against the window, you just have to make your own warm weather getaway. (Even if it’s simply drinking a coconut mojito while sitting under a sun lamp.)
This drink is:
Sunny.
Sweet.
A little tart.
Incredibly bright.
And, it looks fabulous in someone’s hand after they come back in the house from shoveling.
But best of all, it’s utterly craveable.
So, throw on your favorite summer gear and grab that cocktail muddler.
You’re on island time now.
Key Limes Fun Fact:
Key Limes are smaller and tarter than regular limes, so the combination of the two in this cocktail create the perfect amount of sweetness along with a kiss of pucker power!
What Exactly is Coconut Cream?
Coconut cream has a much higher fat content than coconut milk, and has a similar consistency to heavy whipping cream.
Key Lime Tips:
Key limes are mostly found fresh in the summer, which isn’t a huge help when we’re daydreaming about the warm weather of the next equinox! However, you can easily find bottled key lime juice, which is an absolute delight to keep on hand for things like pie, salsas, fruit salad dressings, and – of course – cocktails!
Coconut Lime Pomegranate Mojitos
Serves 2.
Ingredients:
¼ cup fresh mint leaves + more for garnish
1 oz. fresh lime juice
1 oz. fresh or bottled key lime juice
1 oz. agave syrup
4 ounces white rum
1 oz. pomegranate juice
2 oz. coconut cream
Club soda, if desired
Pomegranate seeds for garnish
Instructions:
In the bottom of a cocktail shaker muddle together 16 mint leaves, both types of lime juice, and the agave, until the mint leaves are broken down.
Pour in the rum, pomegranate juice, and coconut cream, and fill the shaker full of ice.
Shake until the cocktail shaker has a light film of cold condensation on the outside.
Strain the mixture into 2 cocktail glasses.
Top with club soda if desired.
Garnish with mint leaves and pomegranate seeds.
